Two Ingredient Pancakes

Looking for an easy new breakfast idea? Try making this nutritious, simple and tasty recipe. It is also paleo friendly!

Just mix two free range eggs with one banana (sliced into half inch pieces) in a bowl. You may need to use a potato masher to mash the banana. Pour mixture onto a cast iron skillet or frying pan. Cook both sides evenly until golden brown and serve. Makes two large pancakes or four small ones. You can also get creative by adding some fresh fruit or topping with raw almond butter.
This great two ingredient duo of eggs and bananas will provide you with a rich source of of fibre, protein, magnesium, potassium, vitamin D, zinc, iron, copper and a variety of your B vitamins. You also get to avoid all that gluten, carbs and refined sugar that are typically found in other pancake recipes. Be sure to include the yolk to get the full health benefits!
